Enhancing taste the way nature intended

There are so many flavours to choose from when enhancing a dish and there are also many ways to extract flavour. We transform wastefulness into pure tastiness. About 25% of the mushroom, the ‘foot’ or stem, is never used for fresh or preserved mushrooms as it is not visually appealing to consumers. These parts are normally thrown away – but they are still full of mushroomy goodness! And the grower has to pay for the removal of this waste product. Since 2008, we started collecting these mushroom stems to process them in our ‘Waste2Taste’ production process.

Scelta Umami produces mushroom concentrate in liquid form. Concentrate can also be spray-dried into powder form. These flavourings are used in a variety of products, such as dry and liquid soups and in sauces. The result is an extremely concentrated, 100% natural taste – 1kg concentrated taste equals 25kg fresh taste! To top it all off, when used in low doses, this 100% natural taste enhancer (mushrooms are naturally rich in ‘umami’ – the fifth taste) does not give a pronounced mushroom flavour, but instead deepens the flavours around it. It’s nature’s answer to MSG – otherwise known as monosodium glutamate and E621.
