Spring is calling, and Ardo is making it easy for foodservice operators to swap savory oven dishes for fresh and colorful salads with its thaw-and-serve Insalatas del Mundo assortment of offerings. Four recipes are available, each of which can be plated as a complete meal, side dish or snack. They are:
Insalata Mediterranea. Delivering a refreshing taste of Italy, this pasta salad is positioned as perfect for lunch or as a side dish. It features a mix of al dente penne, crispy vegetables including cucumber, red onion and grilled red pepper, and juicy yellow and cherry tomatoes. The palate pleaser is a true signature classic with Italian herb dressing.
Insalata Sapphiraa. This Taste the Middle East is presented as a modern tabbouleh with a feast of vibrant flavors with every bite of mixed bulgur, farro, green and white chickpeas, cucumber, diced tomatoes and red onion. Peach and cranberries add a sweet touch, and the spicy Persian dressing with sumac and mint tops off the Middle East culinary experience.
Insalata Olympia. Ardo’s Greek-inspired salad is a surprising mix of orzo, marinated sun-dried tomatoes, orange and green lentils, black olives, red onion, grilled yellow peppers and wild garlic. The savory flavor of lentils is balanced nicely with the spiciness of wild garlic and soft sweetness of the grilled peppers. The sweet mustard dressing finishes the salad, which is ideal as a nutritious lunch or varied side dish.
Insalata Eldorado. The colors of Latin America are vibrant in this flavorful combination of white and red quinoa, edamame soybeans, black beans, sweetcorn, grilled red pepper, mango, tomato cubes and spring onion enriched with dried cranberries for a subtle sweet touch. The fresh and spicy acidity of Thousand Island dressing completes the palette of flavors and colors. This combination ensures a gluten-free meal that’s muy delicioso.
All pre-seasoned salads from Ardo provide chefs and menu planners great convenience, as they can be taken straight from the freezer, thawed for 12 to 24 hours in the refrigerator and thereafter served without need for further preparation. This saves valuable time, and thanks to long shelf life, the salads remain fresh and flavorful.
The uses for Ardo’s salads are endless. They are perfect at a salad bar and on buffet tables, as well as in take-away or event catering scenarios. Such versatility makes them a popular choice for chefs who strive for consistency and creativity in their dishes.
