Pidy Rolls Out Jaconde with Cocoa and Nuts Sponge Sheets
Pidy, the Ieper, Belgium-headquartered maker of ready-to-fill pastry and other products, has added a new flavor to its Technipat frozen sponge sheet range. Now available in a chocolate sponge featuring almond, coconut and pistachio inclusions, recently debuted Jaconde with Cocoa and Nuts sponge sheets are suitable for a variety of sweet applications – from elegant layered cakes and decorative strips, to individual desserts or even Yule logs.
The sheets have a light texture but are also robust enough to hold fillings, and can be crafted into different shapes and sizes. The sponge has been made from a traditional French recipe of eggs and almond powder, which brings a rich taste and dense texture. It is not only soft and airy, but also flexible enough for chefs and caterers to use as a quality base that can serve as the foundation for heir own pièce de résistance.
Versatile sponge sheets can be utilized in different ways, whether delicately stacked to form layered cakes, sandwiched with indulgent butter cream, or rolled into festive roulades.
The sheets, which measure 580mm long x 380mm wide x 05mm thick, come in cases of 10 and can be cut to any size or shape required. They stored frozen and have a shelf life of 12 months, while being ready to defrost in a matter of minutes. Once thawed, the quality of the sheets is guaranteed for 48 hours.
“The sponge sheets are such a versatile ingredient to have on hand all year around, but when our attention turns towards party season and there is a greater demand for indulgent desserts and celebratory cakes, they are an ideal go-to solution for all chefs,” said Fabien Levet, Pidy’s national account manager for foodservice in the United Kingdom. “The traditional French recipe has been developed to achieve a delectably light texture and subtle flavour that complements rich fillings just as well as the lightness of seasonal berries.”
