The Insomnia Cookies ice cream line, Cookies IN Ice Cream, is now available at its more than 220 of the bakery’s outlets in the United States. And just in time for summer, a limited-edition Peaches ‘N Cheesecake option has been added to the range. The flavor combines sugar cookies with creamy peach ice cream, cheesecake pieces and a cream cheese swirl.

Insomnia Cookies, a late-night bakery concept business founded in a University of Pennsylvania dorm room 20 years ago by then-student Seth Berkowitz, offers a wide variety of cookies, ice cream, and other sweet treats in-store, for local delivery, and nationwide shipping.
