With approximately 1.3 million Britons on a gluten-free diet and an estimated 500,000 people in the UK yet to be diagnosed with celiac disease, demand for gluten-free products is on the rise. Among companies developing frozen fare to meet this need is Paramount 21 Ltd, which recently launched five gluten-free, vegan and seafood items targeting the market.
The Newton Abbot, Devon, England-based foodservice sector specialist’s Cod & Asparagus Fishcake is encased in a crispy rice flake coating. Also on the seafood menu is Katsu Curry Fishcake drenched with sweet katsu sauce.
New vegan burger flavor profiles offered are Quinoa, Beet & Edamame Burger and a BBQ Lentil & Mixed Seed Burger. The first is accented with mushrooms, chili, smoked paprika, ginger, garlic and soy, plus a citrus twist. The second features an uncoated blend of lentils, gluten-free oats, sunflower and flaxseeds flavored with smoky sweet barbecue sauce and a kick of chipotle chili.
Fifth in the lineup is an on-trend Cajun-style Spicy Blackened Salmon Burger accented with chili and aromatic cumin, garlic, oregano and thyme. Chefs in Paramount 21’s development kitchen recommend serving it in a toasted brioche bun, topped with citrus cream cheese and mango salsa.
